If you have aging on, yes, they will eventually age back up. However, you can disable aging in the options menu.

There are two ways to get back to day one of young adult: 1 get your logic skills up which happens when you are using the chemistry table, then one of the potions you make will be a “young again” potion. 2 there is a reward in the lifetime rewards chest that can make you young again (I have not tried this one).
