Profit. If profit and earnings is what the players are really looking for, the simple answer is the Medical career. The top of Medical career (World Renowned Surgeon) has the highest earnings per week, while Military (Astronaut) has the lowest earnings per week, as Sims only work once per week.

How do you get a full time job in Sims 3?
To get a job, have your Sim head to the graveyard and click the mausoleum itself. From there, they can take a job from 6PM to 9PM with Wednesdays and Thursdays off for $33, $55 and $88. These two can both be taken at the day spa in town. Their pay and hours are identical, but the days they work are different.

August 2019 Yes it is now possible to have two jobs.
